Recipe for Lemongrass & Chilli Crab

1 large crab, cut into pieces
3 stalks lemongrass
2 red chilli’s
2 stalks sliced spring onion
4 slices fresh ginger
2 crushed garlic cloves
2 tblspn oystersauce
2 tblspn shaoxing cooking wine
pepper & salt

Heat a wok and add 3 tblspn of vegetable oil. When the oil is hot, add ginger and garlic and lemongrass. Fry till fragrant and add the crab, stir and add the shaoxing cooking wine and oyster sauce, stir again. Add bit of water when neccesary, cover the lid and let it cook on medium heat for 3-4 minutes. Take the lid of, turn up heat again and add the spring onions, give it a quick stir again. Serve with a bowl of lukewarm water with a wedge of lemon fro cleaning fingers.
