Agar (also known as agar-agar or kanten) was discovered in 1685 in Japan and has since been used throughout Asia. Agar is mainly used in desserts to like jelly, ice cream, mousse and pudding, but is also used as a thickener for soups. Often used to substitute gelatin in recipes as gelatin is made animal raw materials and agar is vegetarian. Agar is firmer than gelatin and even stays firm at higher temperatures. In general, use 1 teaspoon of agar to thicken 1 cup of liquid. Golden Cup Agar-Agar Powder comes in a small, easy to use packet for those of us who do not use this ingredient often.
