Agar (japanese: kanten, 寒天) was discovered in 1685 in Japan by an inn-keeper and is made of red algae. Agar is used a lot in Asia for desserts like jelly, ice cream, mousse and pudding, but is also used as a thickener for soups. Agar is also used to substitute gelatin (not vegetarian). Agar is a bit firmer than gelatin and stays firm at higher temperatures. Use about 4g of agar to thicken 250ml of liquid. To make agar dissolve faster, rinse the agar carefully, break it into pieaces and let it soak for 30 minutes in cold water. After squeezing out the water the agar pieces are ready to be used. Golden Lily Agar Agar is for the purists who want to use the original raw ingredient instead of the ones in powdered form.
